Chill-eh Fry

Serves about 4
Prep Time - Approximately 45 minutes

Ingredients
  • 1 large tomato
  • 1 large potato
  • 1 green pepper
  • 1 medium onion
  • 1 lb. of stew beef
  • 1 1/2 tablespoons of olive oil or other vegetable oil
  • salt & pepper to taste
  • 1/2 teaspoon baharat/middle eastern spice blend (optional)

Directions
  • Chop the vegetables.
  • ​Cube the meat.
  • ​Heat the oil in a large pan.
  • First saute the potatoes for about 5 minutes or until tender, then add the green peppers for about 5 minutes, then add the onions for about 5 minutes or until they are transparent. Last, add the tomatoes and saute for about 3 minutes or until they are tender.
  • ​Set the vegetables aside.
  • Season the beef with salt, pepper, and baharat to taste.
  • Use the same pan to saute the beef on medium-low for about 20 minutes or until tender and brown.
  • Add the vegetables back in. Saute together for about 5 minutes.

What type of meat do you use in this recipe and other recipes on your site...chuck roast, shoulder roast, London broil, etc.?

I usually use chuck roast but sirloin is a good choice too.

What is the bread that you are using for the wrap. I used to be able to find very thing almost cracker texture and than you would lay it a moist cloth to soften. I don't know the name of it to call around and find it.

The bread you are describing is called “lookhma d’raqqih”. In case you are not a native Chaldean speaker, lookhma is bread, and lookhma d’raqqah is a dried bread. When you are ready to eat it, you wrap it in a moist towel.

We use pita bread... It's best
to get it from a middle Eastern grocery store as usually the kind in regular grocery stores is a thicker pita bread.

After I mix them together I add a couple tablespoons of tomato paste and a splash of water for it to be more like a thick stew.

I like your style too.
