Simsimia/Sesame Bars

This recipe is very simple to make,tastes great and is nutritious too! You can replace the pumpkin or sunflower seeds and almonds with more sesame seeds or use a different nut or seed.

Ingredients
3 cups raw sesame seeds
1 cup raw pumpkin or sunflower seeds
1 cup raw almonds
3/4 cup light brown sugar
3/4 cup honey

Put the sesame seeds, pumpkin or sunflower seeds, and almonds in a pan over medium heat and stir frequently until the sesame seeds are brown.

In a different pan, stir the sugar and honey over medium heat. Stir until the sugar has dissolved.

Put the sesame seeds, sunflower seeds, and almonds in a large bowl. Add the sugar and honey mixture. Grease a mixing spoon and stir until combined well.

You will need an 8 1/2" by 12" jelly roll pan or substitute with something similar. Lay a piece of wax paper or parchment paper in the pan. Put the mixture in the pan. Lay out another piece of wax paper or parchment paper on top. Use a rolling pin to flatten.

Allow to cool and harden. Remove from the pan and remove the paper. Use a pastry cutter or sharp knife and cut into small squares.

Hello! Your video shows pumpkin seeds are used but your list of ingredients show sunflower. Which is correct?

Oops I just noticed that. You can do either. I prefer the pumpkin seeds.

I ended up making it with sunflower (since that is what I had in my pantry) and they ended up tasting delicious. Next time, I’ll try making them with pumpkin. Thanks!
